This quick and easy fresh pasta is delicious served with bolognaise sauce, grated Parmesan cheese and fresh basil - get the kids helping!

  1. Equipment you will need Pot/Saucepan Plastic Knife Bowl Wooden Spoon Strainer
  2. Place water in pot and bring to the boil with salt Place measured ricotta and flour in a bowl Stir gently with the wooden spoon until a ball of dough forms (do not over mix) Sprinkle some extra flour on the bench Tip ricotta mixture/dough onto the bench and divide into 4 balls Roll each ball gently out into a snake Cut the snake into small "pillows" approx. 1 cm in size Gently drop the ricotta/dough pillows into the water Once the gnocchi floats to the top of the water (approx 2 -3 minutes) its is ready, then remove it from the water using a slotted spoon (or a utensils that has holes in it) Place in a bowl and top with your favourite pasta sauce, grated cheese and fresh basil leaves ADULT HELP Boiling the water / straining the hot gnocchi
