  1. Preheat oven 180 deg Whisk egg with vanilla, oil and milk (I used an electric mixer to get really light and fluffy) Add sugar and beat for another 1 minute Gently fold in cinnamon, flour and diced pear Spoon Mixture in 6 large patty pans Optional – pop half a raspberry or strawberry on top of each muffin (fresh or frozen) Sprinkle top with a little extra brown sugar Bake for 12 – 15 minutes until cooked. ENJOY!
