Instructions
- Cut cauliflower into florets and cook in boiling water for 10 minutes
- Drain and mash the cauliflower while it’s still warm
- Stir in cheese, eggs, panko crumbs and salt and pepper to taste
- Place a little olive oil in the frypan and heat
- Spoon the cauliflower mixture in the pan
- Cook until golden brown and set (approx 3 mins)
- Turnover the patties and cook for a further 2-3 minutes and serve immediately or place in the oven to keep warm until you have cooked the whole batch
- Serve with a salad and a salsa or your favourite sauce

1. Substitute the cheddar cheese with tasty cheese or parmesan
