Ingredients
- 1 cups ¼self raising flour
- 1 ¼cups milk
- tsp ½baking powder
- 1 egg
- cup ½raisins or sultanas
- 2 apples
- tsp ½ground cloves optional
- tsp ½ground cinnamon
- 2 tablespoons of vegetable/
- canola/ rice bran oil butter or
- any type of spray oil

Instructions
- Place flour in the bowl
- Add all ground spices
- Add baking powder and make a well in the centre
- Crack egg into the well
- Add milk into the well
- Gently whisk until all ingredients are combined and there are no lumps
- in your mixture
- Grate your apples starting with a whole apple and turning it around so
- you can grate all sides of the apple down to the core, including the skin
- Add grated apple and raisins/sultanas and mix with a spoon
- Put half of your oil/butter in fry pan (or spray pan) and heat on medium
- Place spoonfuls of your batter into the pan – small spoon of batter for
- pikelet or small pancakes, big spoonfuls for larger pancakes
- Cook for 2 minutes or until lots of tiny bubbles appear
- Turn over with the spatula and cook for a further 2 minutes
- Place on a plate to serve with your favourite topping or fruit.

Serve with whipped cream, whipped butter or whipped ricotta
Use as an accompaniment to pork dishes (similar to how a potato
pancake/rosti might be used)
