Instructions
- In a heat proof bowl, add chocolate and copha and stir over a saucepan with boiled water until melted
- In a mixing bowl, combine coconut, chopped nuts, chopped cherries and marshmallows
- Pour in the melted chocolate and copha mix and stir until combined
- Spoon into mini muffin tray liners
- Place in fridge to set for 15 minutes

Optional Extras
1. Any type of nuts are delicious – salted peanuts, walnuts or macadamias
2. You can substitute the cherries with some chopped sultanas to make fruit and nut
3. You can use any type of marshmallows if you don’t have the mini ones
4. Try pouring the whole mixture into one lined baking tray or plastic container to place in fridge, then cut it using a sharp knife once is has set in the fridge
