Fresh Salsa
Fresh vine-ripened tomatoes make this salsa the perfect dip or accompliment to mexican dishes, one the kids can easily make and enjoy!
Instructions
  1. Using a knife, remove the core from the tomato and dice into pieces approx. 1 cm in size
  2. Remove the core and seeds from the capsicum and dice into pieces approx. 1 cm
  3. Remove the stalks from the coriander and chop into fine pieces
  4. Remove the outer layer of skin from the onion and finely dice
  5. Add all ingredients into a bowl and stir.
  6. Add the oil and vinegar to the bowl and stir through
  7. Serve and enjoy

Optional Extras
For a little extra zing, chop up 1 fresh red chili and add to the salsa for the parents!
You can use fresh basil or parsley to substitute the coriander
