Ingredients
- 2 large vine ripened tomatoes
- 1 small spanish onion red onion
- ½ red capsicum
- cup ½chopped coriander
- 1 tbls olive oil
- 1 tbls balsamic vinegar
- Pinch of Salt and Pepper

Instructions
- Using a knife, remove the core from the tomato and dice into pieces approx. 1 cm in size
- Remove the core and seeds from the capsicum and dice into pieces approx. 1 cm
- Remove the stalks from the coriander and chop into fine pieces
- Remove the outer layer of skin from the onion and finely dice
- Add all ingredients into a bowl and stir.
- Add the oil and vinegar to the bowl and stir through
- Serve and enjoy
