Ingredients
- 1 carrot
- 1 Zucchini
- 1 Cucumber
- 1 cup shredded cabbage green or red or both!
- 1 packet of dried crunchy noodles
- 1/3 cup of coriander
- For the Dressing
- 2 tbls soy sauce
- 2 tbls sesame oil
- 1 tsp sesame seeds
- clove ½of garlic

Instructions
- Wash your vegetables in clean water and dry
- Using a knife remove the ends of the carrots, cucumber and zucchini
- Roughly chop the cabbage and place in bowl
- With a grater or peeler, peel the vegetables into strips and place into the bowl
- Set Aside to prepare dressing
- For the Dressing
- Finely chop/mince the garlic
- In a small bowl or jar, add the sesame oil, soy sauce, sesame seeds and garlic and mix/shake until combined.
- Pour over the prepared salad and toss through to coat
- Top with the crunchy noodles, stir through
- Serve and enjoy!

Optional Extras
1. You can add fresh grated ginger to the dressing
2. To spice up the dressing you can add sweet chilli sauce
3. You can use fresh mint or basil to substitute to coriander
4. Mum and Dad might like to chop a fresh chilli through their serving to spicen it up!
Adult Assistance
Younger children may need assistance to mince the garlic and cut the tops off the vegetables
