- 1/2 Cup vegetable oil
- 1 Cup Sugar
- 2 tsp vanilla essence
- 2 cups plain flour
- 1/2 cup Cocoa Powder
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 2 cups grated zucchini
- 1/2 cup milk
- 1 egg

- Equipment required: 25cm square baking tin Grater spatula mixing bowl Measuring Cups Measuring Spoons Large Metal Spoon Sifter
- Method: Pre Heat Oven to 175 degrees Grease and flour the baking tin In the mixing bowl, measure and mix together Oil, egg, milk, sugar and vanilla essence In sifter, measure and sift into the sugar mixture the flour, cocoa, baking soda and then add salt. Stir to combine Grate the zucchini, then gently fold into the batter. Note: the batter will appear very textured, not smooth like a normal cake batter Pour into the prepared tin, and spread evenly Bake for 25 to 30 mins until the brownies spring back when gently touched Allow to cool and cut into squares. Enjoy!
