Ingredients
Mac N Cheese
- 250 grams macaroni pasta
- 2 cups cauliflower florets
- 1 small Zucchini grated
- 1 tsp oil
- 1 clove garlic
- 200 grams bacon
- 1/2 cup frozen peas or tinned corn
- 1 cup cheddar cheese grated
- Salt and Pepper
For the Cheese Sauce
- 3 tbsp butter
- 3 tabsp plain flour
- 2 cups milk
- 1 cup cheddar cheese
- Salt and Pepper

Cheese Sauce
- Melt butter in saucepan, add flour and cook for 1 - 2 mins Add milk and reduce heat to low, stirring regularly with a whisk, to avoid sticking to the bottom Once sauce starts to thicken, add the grated cheese and stir - remove from heat and set aside
Mac N Cheese
- In a small frying pan, heat a little oil Finely chop onions, garlic and bacon Add to frying pan and gently fry for 2 mins Microwave or steam the cauliflower for 3 mins - then puree or "Rice" in a blender Add the cauliflower and grated zucchini to the frying pan with the onion and bacon and add salt and pepper to taste. Fry for a further 2 mins. In a separate pot, boil water and cook macaroni past for HALF the length of time as instructed on the packet Once cooked, drain excess water and set aside In a large bowl add the cooked macaroni pasta, the onion/bacon mixture from frying pan and the cheese sauce. Gently stir through Transfer all the mixture to an oven proof baking/casserole dish Top with a little extra grated cheese Bake in the oven for 10 - 12 mins or until cheese on top is golden and melted Serve with a side salad -enjoy!
