Ingredients
- 1 2/3 cups of Plain Flour
- 1 tsp ½baking powder
- 1/3 cup caster sugar
- 1/3 cup brown sugar and an extra tablespoon for sprinkling on top
- 1 teaspoon cinnamon
- 1 teaspoon vanilla essence
- 2 eggs
- cup ½Vegetable oil
- 3 mashed ripe bananas

Instructions
- Preheat oven to 160 degrees
- Grease and line a loaf tin with baking paper
- In a big mixing bowl, mash banana with a fork
- Crack eggs into bowl and mix into banana mash
- Add oil, vanilla and combine with banana and oil mixture
- Add in all the dry ingredients – flour, baking powder, sugars and cinnamon and mix together well
- Pour mixture into the lined baking tray
- Sprinkle the extra brown sugar on top of mixture
- Place in oven and bake for 60 minutes
- Test centre of bread to ensure it is cooked – if the skewer is clean when you remove it, this is how you will know it is cooked
- Serve warm with a little butter and enjoy!

Optional Extras
1. If you have not nut allergies in your family, you can add some roughly chopped walnuts, pecans or macadamias for some extra crunch
2. To make a cinnamon butter, place ½ teaspoon ground cinnamon into ¼ cup of soft butter, mix and spread onto the warm banana bread
3. This banana bread will keep for up to 4 days in the fridge in an air tight container, and is delicious toasted
4. Serve with a drizzle of honey
