- Pastry
- 2 cup plain flour
- 150 grams butter
- teaspoon ½of salt
- or 1-2 sheets of readymade pastry puff or short
- Tart filling
- 12 eggs
- 6 slices of ham or rashers of
- rind less eye bacon
- 1 cup of grated cheese
- 5 stems of spring onions
- 1 cup baby spinach optional
- salt
- Pepper

- Preheat Oven to 180 degrees
- Place flour, salt and butter in a bowl
- Rub in butter using just your finger tips until it resembles crumbs (or you can mix ingredients in a food processor)
- Add water a bit at a time until the dough comes together in a ball- you may not need all of the water. Do not over mix or overwork your dough
- Roll out on the board until it s a few mm thick
- Spray your muffin tins or tart/flan tin
- Cut out the pastry to the shape & size of your tin. If you are using a muffin trays you can just cut them into squares
- Line your tin or tray with the pastry – it doesn’t matter if a bit hangs over the sides
- Cut bacon/ham into strips and sprinkle into the bottom of the pastry
- Place 2-3 spinach leaves in each tart base
- Sprinkle grated cheese in the pastry cups, dividing evenly between 12
- Crack 1 egg into each tart
- Cut off the roots of the spring onions and slice into fine rounds and sprinkle on top of the cracked egg, again dividing between 12 tarts
- Season with salt & pepper and bake in oven for 15 minutes or until egg mixture is set and pastry is lightly browned and crisp

Optional Extras
1. Wrap pastry in glad wrap and chill in refrigerator for 30 mins. Bring it to room temperature for 10-15 mins before you try to roll it out
2. Lay sliced tomatoes on the top of the tart before baking
3. Add your favorite herbs dried or fresh - oregano, basil, parsley
4. Add other vegetables such as asparagus, peas, corn and mushrooms
5. Serve with relish or tomato sauce – try the Get Kids Cooking easy tomato sauce or relish recipe
6. Serve with a salad and or slices of avocado
7. Make 1 large tart by using a large flan/tart case, pie dish or baking tray
