Sweet Potato Mash
The perfect side dish to our Parmesan crumbed chicken. Sweet potatoes are rich in vitamins and minerals and provide much needed dietary fibre.

Ingredients
Instructions
  1. Peel orange sweet potato and cut into 2cm pieces
  2. Place sweet potato in a saucepan and cover with water.
  3. Bring to the boil over medium-high heat and cook for 15 minutes or until tender.
  4. Drain sweet potato in a colander and return to saucepan.
  5. Mash with a fork or potato masher, add butter and mash until smooth
  6. Season with salt and pepper

Optional Extras
1. For a dairy free version use margarine and chicken or vegetable stock instead of butter and milk.
2. Stir a mixture of herbs through the mash, such as chives, parsley and marjoram
